A Word about Mélange Caterers


Your host is Wayne Lyons, most recently Chef and Saucier with the Marriott Corporation in New York City. Wayne, a man of vision and structure, was originally schooled as an architect, receiving his degree from Pratt Institute in New York. However, very shortly after beginning his career, Wayne started to apply his keen sense of aesthetic quality to another innate gift – gourmet food preparation. He began experimenting with “what would happen” if you mixed a little bit of this with a touch of something else.... The results were astounding! Soon Wayne found himself embarked on a new career as “Chef Par Excellence.”

Shawn Santana began cooking for family and friends as soon as he was old enough to reach the stove. By the middle school years when the greatest decision a youngster generally makes is what sports team to join, Shawn decided firmly upon a career. “I want to be a chef.” Fortunately for Shawn, his high school had a culinary arts program. Many a guidance counselor tried to persuade him to pursue another career but Shawn would not sway from his mission. During this time Shawn began to work for Wayne Lyons. Shawn enhanced his natural talent by attending The New York Restaurant School and is now a partner at Mélange.

It has long been a dream for Wayne & Shawn to open a restaurant, to enhance the success of their catering business.

That dream is to come true in spring 2007 when their place Soul Flavors is to open at 354 Grove St., Jersey City NJ.
